I know that I started out with the $30/day post, and then after the planning post, its just been blank for a long time. A lot happened during that time. I went to India, Kuwait, Las Vegas and have been pretty busy at work too. So to get back on track about our experiment for a week, I’ll start with day 1.
For our first day, we actually went kind of all out. I woke up really late and so combined breakfast/lunch into one meal and ended up eating a fried egg sandwich. For dinner, we ended up cooking the rice, chicken thighs and broccoli.
The meal was pretty quick to make and we had a lot more chicken left over than we thought we did. So we took half of the food and took it for lunch for the next day.
Chicken in Tomato sauce
Chicken thighs – 4
Add worcestershire sauce to the chicken and then add seasoning salt and pepper and let it sit for about 10 minutes. Heat oil in a pan on medium high heat and add the chicken to the pan. Let it cook for about 8 mins on each side. Lower the heat and then cover the pan and let it cook for another 10 minutes. The chicken should be pretty moist by now, just add 4 tbsps of tomato sauce (or as saucy as you’d like to make it) and let it cook for about 10 minutes till its pretty thick. I added some crushed red pepper for a little bit of a kick.
3 broccoli stems
1 whole onion sliced into long strips
Super easy to make. Heat oil in a pan on high heat, and add the broccoli, let it cook for about 5 minutes. I like to get a little bit of browned parts on my broccoli. Lower heat to medium-low and then add soy sauce and onions and cover and cook for about 10 minutes or until broccoli is fork tender. Done.
Simple. Delicious. Fairly healthy?
